"Better than mashed potatoes - and I love mashed potatoes!!"
Mashed turnips with bacon and garlic
Trim 8 to 10 Japanese turnips. Boil in water until tender - about 10 minutes. Drain and then mash until smooth.
Dice 2 garlic cloves (or can use 3 garlic scapes). The scapes add a great color to the dish.
Dice 2 strips of bacon, add the garlic, salt and pepper to taste and sautee until bacon is crispy. Drain off all but about 2 TBSPs bacon grease. Add the mashed turnips and heat for a couple of minutes if needed to bring up to serving temp.
**Tara's note: Could sautee the turnip greens in a little left over bacon grease and serve on the side.
